This was on a Thursday evening that I was there, so keep that in mind. The brisket was tough. I don't know how that could have been smoked for 18 hours and not have any bark on it either. My buddy got the pork belly, which was dry and overcooked. The sides, however, were the stars of the show. The potatoes and coleslaw were outstanding. He had the beans, which he said were fire. I may give them another try, as I'm hopeful this was an off night?! Maybe next time I'll try the ribs?
